Mini versions of my carrot cake with mock cream cheese icing.  Moist and flavorful and made with almond flour.  Due to the restrictions of the Cottage Food License I am unable to use actual cream cheese in the icing.  Two muffins in a package.

Carrotcake Cupcakes

  • Ingredients: Almond flour, carrots, brown sugar, eggs, coconut oil, shredded coconut, salt, vanilla, baking soda, baking powder, cinnamon, ginger, nutmeg. ICING:  Powdered sugar, butter, water, cream cheese flavoring (propylene glycol, water, natural & artificial flavors), salt

    Contains:  Eggs, almonds, coconut (tree nuts), dairy
